OK, this is delicious. There are tons of ways to personalize or mix it up depending on what sounds good at that exact moment, but stick to the basic ingredients and you won’t be disappointed.

I have to admit my timing is off a bit with this recipe. Peaches are near the end of their season, so it was slim pickin’s at the market. If possible, I recommend checking with your local Farmers Market or produce stand in case there are better options than what larger retailers can offer. Regardless, the strong, sweet flavor offered by the peaches, and the combination of other supporting flavors is what really sells this.

Another great thing about this meal is convenience. The ingredients are easy to source and prep, and the chicken can be made in a slow cooker to save some time on the final product.
You have options when choosing your flatbread base. I found naan bread to be perfect. It didn’t dry out even when baked longer than packaging instructions.
You’ll want to bake the bread for a few minutes before topping with peach preserves, cheese, chicken, peaches and shallots. I recommend caramelizing the shallots before using. It’ll cut the bitterness and bring out the easier flavors.
Once it’s all together, bake another 10 or so minutes, until the cheese is melted and flatbread is golden brown. Brace yourself – the aromas that’ll fill your kitchen while this bakes will be amazing!
While this is in the oven, toss the arugula with a bit of olive oil, white wine vinegar and fresh pepper; not too much, just enough to lightly coat.

Once completely baked, top with the dresses arugula and finish with a drizzle of local honey. The arugula will add a pepper-like pop while the honey compliments the sweetness of the peaches.

Tips: Now, I mentioned this recipe being easy to personalize. You can add avocado or slivered almonds for different textures. Maybe swap the arugula for fresh basil. Garlic would be another great twist. Experiment with flavor profiles to find the best combo for your liking.
Chicken & Peach Flatbread
Serving Size: 2
Ingredients:
- 1 package of naan bread (usually 2 flatbreads per package)
- 1 Tbls peach preserves
- 1 1/2 – 2 cups shredded chicken (rotisserie or prepared in slow cooker)
- 3 oz. shredded mozzarella
- 2 ripe peaches, sliced
- 2 shallots, sliced & lightly caramelized
- 1 cup arugula
- Light drizzle of olive oil
- Light drizzle of white wine vinegar
- Pepper
- Honey
Instructions:
- Preheat oven to 400 degrees F
- Place bread on baking sheet and bake for 3-5 minutes.
- Remove from oven and brush with preserves, stopping about 1/4 of an inch from the edges. Then top with cheese, chicken, peach slices and shallots.
- Bake for 10-12 minutes, until cheese is melted and bread is golden brown.
- Top with arugula mixture and slice, then add drizzle of honey.
- Serve & enjoy!
